Scarlet Knife is a chef-owned, family-operated restaurant on Troy-Schenectady Road (Route 2) in Latham, in the Town of Colonie, built in part of a former Kmart.
Executive chef and owner Paul Dimm and James Warren run a seasonal menu of steak, seafood and other American dishes, with ingredients sourced from the Capital District and Hudson Valley whenever possible. The wine list carries more than 150 bottles, and an in-house pastry team makes the desserts.
