About
Chez Pierre is a French restaurant at 979 Saratoga Road (Route 9), with a Gansevoort mailing address and a location in the Town of Wilton, between Saratoga Springs and Glens Falls. Pierrette Baldwin, who grew up in a cafe in occupied France, and her husband Joe, the American GI she met there, opened the restaurant in April 1964 and named it for their son Pierre. Their daughter Pia Baldwin Field and her husband Lincoln, the head chef, run the restaurant today.
The menu has barely moved in six decades: escargot, frog legs, country pate, chateaubriand, beef Wellington, veal Oscar, lobster Newburg and steak au poivre, with crepes Suzette and chocolate mousse for dessert, all cooked to order under a neon Eiffel Tower sign out front. Joe Baldwin died in 2013, and Pierrette, known to regulars as the Grande Dame, died in July 2026 at 91, according to The Chronicle.
