Familiar Creature

Familiar Creature is a wine bar and small-plates restaurant at 42 Phila Street in downtown Saratoga Springs, opened in early 2025 by Brendan Dillon and Dennis Kiingati, the owners of Hamlet & Ghost. The building dates to 1902 and was once a livery and, in the 1990s, a fruit market called Palmetto’s.

The idea, Dillon told The Daily Gazette, was a casual Montreal-style wine bar rather than a special-occasion room. Executive chef Michele Hunter, who ran the Hamlet & Ghost kitchen until 2021, cooks a menu of build-your-own meat and cheese boards, house sausage and pâté, roast chicken with frites and seasonal sides, with local beer on tap, spritzes and a wine list that runs from natural bottles to familiar classics.

What to know
